Ingredients

For the Pasta:

  • 12 oz pasta (penne, rigatoni, or cavatappi)
  • 1 lb ground Italian sausage or ground beef
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 small green bell pepper, diced
  • 1/2 cup black or green olives, sliced (optional)
  • 1/4 cup pepperoncini, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil

For the Creamy Sauce:

  • 1 cup heavy cream
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder

For the Grinder Slaw:

  • 2 cups shredded iceberg lettuce or romaine
  • 1/4 cup sliced pepperoncini
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp mayonnaise
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

Step 1: Cook the Pasta

Boil the pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining. Set aside.

Step 2: Cook the Meat and Veggies

Heat olive oil in a large skillet over medium heat. Add the ground sausage or beef and cook until browned. Stir in the garlic, onions, bell peppers, and tomatoes. Sauté until fragrant and softened.

Step 3: Make the Creamy Sauce

Reduce the heat to low and pour in the heavy cream. Stir in the mayonnaise, sour cream, and Dijon mustard. Add garlic powder, onion powder, and parmesan cheese. Stir until creamy. Gradually add the mozzarella until melted.

Step 4: Combine Pasta and Sauce

Add the cooked pasta to the skillet. Toss until fully coated. If the sauce is too thick, add a splash of pasta water.

Step 5: Prepare the Grinder Slaw

In a bowl, mix the shredded lettuce, red onion, and pepperoncini. Add the mayonnaise, red wine vinegar, oregano, salt, and pepper. Toss well.

Step 6: Serve and Enjoy

Plate the pasta and top with the slaw for a crunchy, fresh bite. Garnish with fresh parsley or basil.
